Easy Chicken Pilaf
Easy Indian Cooking

6-8         tablespoons oil
1 1/2-2   skinned chicken pieces
1            packet Rice Pilaf Mix
2            cups Basmati Rice
4            cups water
1/4         teaspoon salt

Rinse rice 3-4 times to remove extra starch and drain well.
In a large pan, heat oil on medium high heat and brown chicken pieces.
Add Rice Pilaf Mix and drained rice, stir fry for a minute.
Add water 1/4 teaspoon and mix well.
Increase heat to high and bring to boil, stirring occasionally.
When water reduces to rice level, lower heat to low. Cover and simmer for 15-20 minutes.
Serves 4-6.
