Cauliflower & Potato Curry
Easy Indian Cooking

 6-8    tablespoons
Curry Masala Mix: 1 Pack
1        cauliflower, cut into flowerets
1        lb potato, peeled and cut into 2 inch cubes
1-2    medium chopped tomatoes
Water:  1/2 cup
2-3    tablespoons fresh cilantro leaves chopped (optional)

In a large pan or wok, heat oil on medium high heat.
Add Curry Masala Mix, cauliflower and potatoes and stir fry for a minute.
Add tomatoes and water. Mix well.
Reduce heat to medium low, cover and cook 10-15 minutes till vegetables are tender and masala (sauce) is thick.
Note: Add more water to suit sauce thickness.
Turn heat off. Garnish with fresh chopped cilantro leaves and ring the dinner bell.
Serves 4-6.
Note: To increase spiciness add red pepper or chopped green chilies.
To reduce spiciness and flavor, use less mix and add salt.
