Easy Vegetable Pilaf
Easy Indian Cooking

6-8         tablespoons oil
1            cup potatoes peeled & cut into one inch cubes
1            cup diced carrots
1            packet Rice Pilaf Mix
2            cups Basmati Rice
4            cups water
1/4         teaspoon salt
1            cup frozen peas, thawed

Rinse rice 3-4 times to remove extra starch and drain well.
In a large pan, heat oil on medium high heat.
Add potatoes, carrots and Rice Pilaf Mix. Stir fry for a minute.
Add drained rice water 1/4 teaspoon salt and mix well.
Increase heat to high and bring to boil, stirring occasionally.
When water reduces to rice level, lower heat to low. Add peas and mix.
Cover and simmer for 15-20 minutes.
Serves  6-8
