Easy Vegetable Curry
Easy Indian Cooking

Oil: 6-8 tbsp.( tablespoons)
Curry Masala Mix: 1 Pack
Medium chopped tomatoes: 2
Your choice of vegetables or veggie mix: 2 lbs
Water:  1/2 cup
Fresh cilantro leaves chopped: 2 tbsp (optional)

In a large pan or wok, heat oil on medium-high heat.
Add Curry Masala Mix, vegetables and stir-fry for a minute.
Add tomatoes and water. Mix well.
Reduce heat to medium-low, cover and cook 10-15 minutes till vegetables are tender and masala (sauce) is thick.
Note: Add more water to suit sauce thickness.
Turn heat off. Garnish with fresh chopped cilantro leaves and ring the dinner bell.
Serves 4-6.
Note: To increase spiciness add red pepper or chopped green chilies.
To reduce spiciness and flavor, use less mix and add salt.
